PURPOSE:Skins are removed from soybeans, as they are kept at a specific temperature, thus causing hardly denaturation and deterioration of soybean constituents. CONSTITUTION:While being kept at a temperature lower than 40 deg.C, soybeans are peeled. Thus, skin peeling can be done without reduction in nitrogen solubility index, thus giving soybean products with good color, taste and texture. |
