PURPOSE:To obtain the titled gum efficiently in high quality without using an expensive organic solvent, by extracting a gummy material with water, blending the extracted solution with a metal salt to precipitate the gummy material. CONSTITUTION:For example, 100pts.wt. cold water-warm water (preferably 30-50 deg.C) is added to 2pts.wt. quince seed, which is stirred, and insoluble materials are eliminated to give an extracted solution. The extracted solution is blended with preferably 0.1-0.5wt% metal salt (preferably aluminum salt such as aluminum chloride, aluminum sulfate, aluminum polychloride, etc.), to precipitate a gummy material. The precipitate is insolubilized with a hydrophilic organic solvent, only the metal component is solubilized with an acid or alkali, removed, and the resultant material is washed to give a gummy material.
