摘要 PURPOSE:To obtain a MISO enriched with vitamin B1, B2 and imparted with the deliciousness of the components of red bran, by adjusting the concentration of alcohol to be added for the prevention of the dilation of packaged MISO to a proper low level, adding a proper amount of red bran to the alcohol, leaving the mixture to stand for a proper days, and spraying the product to MISO after filtration. CONSTITUTION:The alcohol to be added to MISO to prevent the dilation of packaged MISO is adjusted to a properly low concentration, e.g. 20-60%, and mixed with a proper amount, e.g. 20-40% of red bran. The mixture is left to stand for several days-several weeks to transfer the vitamin B1, B2 and the tasty components of the red bran to the alcohol solution without causing putrefaction of the bran. The product is filtered to obtain a clear liquid, which is sprayed to MISO in place of conventional alcohol spraying. The MISO can be enriched with vitamin B1, B2 and imparted with the deliciousness of the components of the red bran by this process. Since vitamin B1, B2 are highly degradable in spite of the high water-solubility, the dissolution and degradation of the compounds are prevented by dissolving the compounds in the alcohol used as an additive of MISO.
