PURPOSE:To prepare a fibrous gel having unique texture and usable as a dessert food such as jelly, by mixing an aqueous solution of a gelatinizing agent with an aqueous solution of an alkali gelation. CONSTITUTION:An aqueous solution of an alkali gelatin and an aqueous solution of a gelatinizing agent are prepared separately. One or more acidic substances selected from organic acids, inorganic acids, fruit juice, fruit pulp and fruit pieces are added at least one of the above solutions, and the solutions are mixed together under agitation at a temperature above the gelling temperature of the mixture obtained by the mixing of the solutions and below the point higher than the gelling temperature by 15 deg.C. The obtained mixture is cooled to a temperature lower than the gelling temperature. |
