PURPOSE:To prepare the titled food having nutrient value and springiness, by the high-pressure extrusion of deaerated ground meat of fish or shell fish and/or soybean protein followed by the cutting of the extrudate while spraying an emulsion of a surface active agent to the die. CONSTITUTION:A slurry of ground meat of fish or shellfish prepared by conventional process and/or refined soybean protein or their mixture is deaerated in a vacuum chamber, and extruded under pressure with a high-pressure extruder. The obtained dough is supplied to a macaroni die, and the cutting of the dough is carried out while spraying the die with an emulsion of a surface active agent such as a sugar ester, etc. |
