PURPOSE:To prepare an instant white sauce capable of providing a white sauce having rich and excellent taste and flavor instantaneously by stirring together with water or hot water, by using wheat flour having alpha-form and powdery oil or fat as raw materials. CONSTITUTION:alpha-Wheat flour is mixed with powdery oil or fat, extruded with a hot extruder, and crushed to fine powder to obtain powdery roux. The roux is mixed with more than equal amount of powdered milk, about 20-30wt% of waxy alpha-starch, and about 3-5wt% of powdery alcohol. |
