PURPOSE:To prepare a fibrous gel having unique texture and usable as a dessert food such as jelly, by mixing an aqueous solution of a gelatinizing agent with an aqueous solution of an acidic gelatin. CONSTITUTION:An aqueous solution of an acidic gelatin and an aqueous solution of a gelatinizing agent are prepared separately, and the solutions are mixed together under agitation at a temperature above the gelling temperature of the mixture obtained by the mixing of the solutions and below the point higher than the gelling temperature by 15 deg.C to obtain a mixed aqueous solution containing the gelling agent and the acidic gelatin at a weight ratio of 1:(0.3-0.5). The obtained mixture is cooled to a temperature lower than the gelling temperature. |
