PURPOSE:To obtain the titled dessert having excellent taste, flavor and nutrient value, by mixing a viscous material containing a gelatinizing agent with the main liquid of the dessert, and dissolving a part of the viscous material in the main liquid, and dispersing the remaining part of the material in the main liquid in the form of small pieces. CONSTITUTION:A viscous material mixed with a gelatinizing agent such as gelatin, pectin, etc. is mixed with the main liquid of dessert composed of a dairy product and maintained at a definite temperature. A part of the viscous material is dissolved in the main liquid, and the remaining part thereof is dispersed in the main liquid in the form of small pieces. The objective gelatinous dessert can be obtained by cooling the liquid in a proper container. |
