PURPOSE:To enable uniform coating of chocolate, by adding soft centers to a rotary oven, revolving the rotary oven, sprinkling molasses on the centers while rolling them, sprinkling polysaccharide powder, and, putting molten chocolate on them. CONSTITUTION:Soft centers such as spherical jelly, etc. are put in a rotary oven. As the centers are rolled, molasses consisting of sugar, thick malt syrup, and water is sprinkled on them, and attached to the centers uniformly. Polysaccharide (e.g., pullulan) powder having high water absorption, showing adhesivity during water absorption, is then spinkled on them, and molten chocolate is imimediately put on them to give a cake coated with chocolate. Consequently, even soft centers can be uniformly coated with chocolate. The formed chocolate layer will not be released, and the centers will not be aggregated.
