PURPOSE:To prepare a granular food having excellent taste and palatability, by granulating a fluid raw material containing citric acid salt and an alginic acid salt and/or a low-methoxyl pectin. CONSTITUTION:A fluid raw material obtained by adding sugars, gums, proteinous materials, etc. to fresh water, is added with (A) 0.3-1.5wt%, preferably 0.4-0.7wt% of an alginic acid salt or low-methoxyl pectin, or their mixture and (B) 0.02-1.5wt%, preferably 0.2-1.0wt% of a citric acid salt such as sodium citrate. The obtained fluid raw material is added dropwise to a solution of a polyvalent metal salt such as calcium chloride, etc. to obtain a granule composed of said raw material covered with gelatinous coating layer. The granule is immersed in fresh water for >=1hr, and then immersed in a seasoning liquid for >=1hr to transfer the seasoning component into the granule. |
