PURPOSE:Agar hydrolyzed to the constituent monosaccharides is used as a color developer for fish paste product. CONSTITUTION:Agar is heated in a moderately strong acidic solution for several hours and optionally subjected to the treatment such as neutralization, concentration, desalting, etc. A liquid or solid agar product hydrolyzed to its constituent monosaccharides is obtained by this process. The product is used as a color developer for fish paste product. Concretely, <=2wt% (in terms of the raw agar) of the hydrolyzed product is added to the ground fish meat. |
