PURPOSE:To obtain the titled food of paste made from the starch of the devil's- tongue having nutritive value resulting from milk and no change in taste, by adding powder of a devil's tongue to a milk solution at a specific temperature, dissolving it, allowing the solution to stand, blending it with a small amount of an alkali solution, kneading them, boiling the blend at a specified temperature. CONSTITUTION:Powder of a devil's tongue is added to a milk solution at <=20 deg.C, dissolved, allowed to stand at <=16 deg.C, and blended with a small amount of an alkali solution with adding the alkali solution little by little, and the blend is boiled at <=70 deg.C, to give the desired milk-containing paste made from the starch of the devil's-tongue. EFFECT:Elasticity of devil's tongue of its own is not lost. |
