PURPOSE:To produce L-pantoic acid salt and/or L-pantolactone, in high efficiency, by reducing alpha-ketopantoic acid salt or alpha-ketopantolactone with microorganisms. CONSTITUTION:A microbial strain belonging to Mucor genus or Rhizopus genus, e.g. Mucor rouxianus IFO 5773, Rhizopus chinensis IFO 4768, etc. is cultured. Solid alpha-ketopantolactone or its aqueous solution is added to the above cultured product, culture medium or the suspension of the cultured microbial cells, agitated in a rotary bottle under aerobic condition at 2-5 pH for 12-96hr, and filtered to remove the microbial cells. The objective L-pantoic acid salt and/or L-pantolactone can be separated from the filtrate. |
