PURPOSE:To provide a sand bed for pickling, playing the role of both the pickling bran and the weight stone, and capable of elongating the interval between the mixing operations, by washing even-grained sand or small stones thoroughly with water to remove foreign materials, boiling the sand, etc., and adding salt thereto. CONSTITUTION:Even-grained sand or small stones are washed thoroughly with water to remove the foreign materials therefrom, boiled and mixed with salt to obtain the objective sand bed. The sand bed 2 is charged in a vessel 1, water is poured into the vessel, and the sand is stirred thoroughly to mix the sand, salt and water intimately. Thereafter, the vegetables such as Japanese radish, etc. are embedded in the sand below the water level 3. The sand plays the role of bran and the weight stone to prevent the emergence of maggot. Since the souring of the vegetables is prevented, the interval between the mixing operations can be elongated and the pickling can be carried out without using additional weight stone. The sand is free from stickiness, and it can be removed easily from the hand or pickles simply by washing with water. Since the sand bed is resistant to degradation, it is economical and sanitary, and can be handled even by a person who dislikes the odor of the salted rice-bran paste which is used as a conventional pickling bed. |
