PURPOSE:To prepare easily cookable noodles having excellent taste and high aging resistance, by arranging a number of separate noodles having definite length side by side in a plane, and folding the noodles in two at the middle part. CONSTITUTION:Noodle pastry obtained by kneading wheat flour with 20-50% of water is passed through the gap between the press rolls 4, 4 of a noodle- making machine to obtain a noodle web 5 having a definite thickness. The noodle web 5 is slit to a number of fine noodles 2 by the slitter 6, and then cut to definite length by the cutter 7. The cut noodles 2 corresponding to the amount of one bundle is placed on the net conveyor 8, and moistened with steam blasted to each noodle string from upside and downside. The surface of the noodle is glazed and the noodle is converted to alpha-form by this process. The treated noodles are folded in two, and moderately dried to obtain the product. The produced noodles can be cooked easily, and have delicious taste, high resistance to aging and improved qualities. |
