Hermetically sealed, heat-sterilised preserves of baked, fried or roasted foodstuffs in light film containers with sealed-on tops are obtained, with retention of the crispy baked, fried or roasted texture of the foodstuff, by carrying out the sterilising heating process, which advantageously simultaneously bakes, fries or roasts the foodstuff, when the container is open and by sealing the container when the heat treatment has been completed but before cooling to below the temperature of sterilisation. In this way, the hitherto customary process involving subsequent heating of the sealed container, together with the expense entailed by the equipment required and the deleterious effect on the container contents, are eliminated.
