<p>The known conversion of glucose (I) to fructose (II) using an immobilised glucose isomerase (III) system is improved by treatment of the feedstock (contg. (I) and minor amt. of (III)-poisons) with an oxidising agent (IV) at 10-80 deg.C/pH 6-9 prior to isomerisation. (IV) is a peroxide, hypohalite, per halate, or persulphate. - Prefd. (IV) are alkali(ne earth) metal hypochlorites or perchlorates, esp. H2O2, and amt. used is 50-500 pref. 50-250 esp. 100-200 ppm. Treatment is pref. at 50-70 deg.C/pH 7.5-9, and residual (IV) may be removed by passage over C, or addn. of a sulphite (pref. 100-1000 ppm). - Treatment with a range of oxidising agents effectively removes (III)-poisons and increases the half-life and productivity of the EPAB- EP-122986 B A process of treating a glucose feedstock prior to enzymatic conversion to fructose, characterised in that the feedstock is contacted with from 50 to 500 ppm of an oxidizing agent at a pH from 6 to 9 at a temperature from 10 to 80 deg.C.
