<p>PURPOSE:To prepare pasty sake, by using sake lees and alcohol as raw materials, and thoroughly grinding and kneading the materials. CONSTITUTION:Sake lees are mixed with alcohol and/or an alcohol-containing liquid such as Japanese sake, MIRIN (a sweet sake used for seasoning), liquor, etc., kneaded throughly, divided into fine pieces, and filtered to obtain the fraction passing through the seave of 2-5mm., preferably <=3mm. mesh. The ratio of the sake lees to the alcohol, etc. is selected to give the final product having an alcohol concentration of about 20-50%.</p> |
