PURPOSE:To prepare a coagulated product soluble in and unswellable with water and hot water, and having high stability, by treating a reversible KONJAK (paste made from the starch of the devil's-tongue) at a low temperature. CONSTITUTION:The root of devil's-tongue or properly hydrated KONJAK powder is mixed with sodium salt of edible organic acid, sodium polyphosphate, sodium hydroxide, etc. and heat-treated at >=70 deg.C to obtain reversible KONJAK which can be transferred reversibly between the liquid state and the coagulated state by the temperature change. The reversible KONJAK is if necessary mixed with fish, cattle meat, cereals, and arbitrary other foods, formed to an arbitrary form such as film, plate, particle, block, filament, string, rod, cylinder, etc., and treated at a low temperature. |
