Refrigerated bread dough and manufacturing method therefor. Fat is applied to at least one surface of a flour and water mixture; alternating layers are formed from this coated mixture; at least one of the following constituents is isolated - the water, and the acidic and basic raising agents - from the remainder of these constituents, so that at least one of the agents remains 40 % to 85 % unreacted, after completion of rolling and folding of the dough, and the dough 13 is placed in a container 1 comprising a plunger piston 10, 11 which is closed. On opening the box (removal of the tab 7), the gas produced by the fermentation is momentarily retained. Baking produces a loaf of pleasing appearance. <IMAGE>
