A process for obtaining, and utilising for recycling, high-quality nutrients, in particular lactic acid bacteria, envisages the production of sour dough bread loaves from cereal, in particular biodynamically grown cereal, using the natural sour dough method, after which these sour dough bread loaves are treated with water and subjected to spontaneous acidification, the liquid is then removed, and the remaining product is dried and subsequently ground. Flour which has been prepared in this manner can be used for human, animal or plant nutrition, as a packaging additive, for treating surface injuries to the human or animal organism or surface damage to the vegetable organism, and for cultivating and composting soils. |
