PURPOSE:To provide the titled apparatus capable of changing the size and shape of the bean curd to be produced, by using a forming part made solely with a cloth, and an upper mold having a pressing member protruded from the mold to press the bean curd in the forming part from above. CONSTITUTION:Plural cylinders 9 each having a forming cavity 2 are protruded upward from the lower mold 1, and a sheet of cloth is dangled in the cavity 2 in a U-shaped cross-section without support. The circumference of the cloth 4 is suspended from the upper edge of the cylinder 9. The circumference of the cloth is surrounded by the fixing band 10 lined at the inner face with a rubber plate, and is fixed to the cyliner 9 by tightening the clamp 10b of the band 10 with a screw. A stopper string 4a is attached to the circumference of the cloth 4 to prevent the slip and fall of the cloth from the band 10. The size and shape of the bean curd B to be produced can be selected freely to an extent independent to the size and shape of the mold by controlling the extent of the dangling of the cloth 4. |
