摘要 PURPOSE:To obtain a composite seasoning having rich and delicious taste and giving luxury taste spreading in the palate, by using 5'-inosinic acid, 5'-guanylic acid, 5'-xanthylic acid, 5'-adenylic acid, K, Na and Ca at specific ratios. CONSTITUTION:The objective seasoning composition contains Na, K, Ca, 5'- inosinic acid, 5'-guanylic acid, 5'-xanthylic acid and 5'-adenylic acid. The gram equivalent ratio of Na:K is (0-3.5):1, and that of Ca:K is (0-1.5):1. The ratio of (the sum of the molar numbers of 5'-inosinic acid, 5'-guanylic acid, 5'-xanthylic acid and/or 5'-adenylic acid):(the sum of gram equivalent numbers of K, Na and Ca) is (0.01-0.5):1. Any nucleic acids or their salts may be used regardless of the preparation process, e.g. fermentation process, acid decomposition process, etc. There is no restriction on the source of Na, K and Ca, e.g. salts of 5'- inosinic acid, 5'-guanylic acid, and 5'-adenylic acid, chlorides, hydroxides, phosphates, carbonates, organic acid salts, fish or shellfish, nut, egg, meat, etc.
