摘要 PURPOSE:To prepare a seed milk having improved protein recovery ratio, solid recovery ratio, emulsion stability and palatability, etc., by finely dividing sunflower seeds in the presence of water, agitating the finely divided seeds at a given pH and temperature for a given time, and further finely redividing the resultant fine particles. CONSTITUTION:Sunflower seeds or a mixture of the sunflower seeds with one or more oil stuff seeds other than the sunflower seeds is finely divided in the presence of water in a colloid mill or hammer mill, etc. in the first step and agitated at 60 deg.C- the boiling point and 6.5-7.5 pH of the seed milk for 5- 180min in the second step. In the third step. the resultant fine particles are then finely redivided in the same way as in the first step to give the aimed seed milk product. A milk protein in an amount of 0.01-10% based on the seed milk is added to prevent the gelation of the milk, and an edible reducing agent in an amount of 0.001-5% based on the seed milk is added to prevent the coloring.
