<p>The constituents of tea are converted by heating them in the presence of water and oxygen at a temperature of above 50 DEG C. and a gas pressure of at least 7 kg/cm2 gauge. Thus, green tea may be converted to partially fermented or black tea, and partially fermented tea may be converted to black tea. For example, an aqueous solution of green tea solids is converted to an aqueous solution of black tea solids, and the solution is then dried to give an instant tea.</p> |
