摘要 In order to obtain a high fat content product derived from pork rind useful for the manufacture of food products such as sausages the invention provides a product having a fat content of from 20 to 50% by weight, a water content of not more than 15% by weight, the product being in particulate form and having an average particle size of not more than 5 mm. The product may be made by first cooking pork rind, followed by freezing e.g. by solid CO2 or liquid N2 and comminuting to the required particle size.
