<p>PURPOSE:To enable the omission of the thermal sterilization process in the preparation of refined Japanese sake, and to improve the taste and flavor of the product, by applying electron field to the refined sake before or after ripening. CONSTITUTION:In the conventional preparation of refined sake, fresh sake is thermally sterilized, ripened for about >=6 months, bottled, and again thermally sterilized. Electron field treatment is used in place of the thermal sterilization treatment. The electron generator 1 for the eletctron field treatment is furnished at its bottom with an electron induction electrode 2 acting as an anode which is inserted into a cylindrical electron charger 3 acting as a cathode. Fresh sake or ripened refined sake is introduced into the electron charger 3 through the inlet 4, subjected to the electron field treatment, and discharged from the outlet 5. In the case of processing ripened refined sake, the treated product is bottled, and the thermal sterilization process after bottling is omitted.</p> |
