PURPOSE:To prepare a dressing- or mayonnaise-like food having excellent taste and flavor, by adding a small amount of separated soybean protein to nuts, adding vinegar thereto, and homogeneously mixing the mixture. CONSTITUTION:The objective vinegar-containing food has homogeneous texture as a whole and a pH of 3-5, and is composed of (A) nuts (e.g. almond, cashew nuts, peanuts, etc.), (B) separated soybean protein (e.g. separated soybean protein powder) and (C) vinegar. The amount of (B) is 1-5pts.wt. per 100pts.wt. of (A), and the sum of (A)+(B) is 10-60wt% based on the whole composition. The food can be prepared by mixing the raw materials of (A), (B) and (C) at the above ratios, and grinding and mixing the mixture under a condition to attain 3-5pH. The plain dressing- or mayonnaise-like food having moderate taste and flavor of nuts can be prepared by this process. |
