The invention relates to a system for processing and preserving packaged fruit by the gradual emission of SO2. According to the invention, the cardboard 1, 2, packaging the fruit is used for carrying out the desired dosing of the processing gas, the latter being released gradually by a product 4 such as sodium bisulphite SO3HNa reacting with humidity and inserted in the corrugations 3 of a panel 1, 2, 3 enclosing from 5 to 10 g of sodium bisulphite and closed at the two ends by slots retaining the product 4 producing the gas. The system is particularly suited for the preservation during transport and storage of fragile fruit such as berries, for example strawberries, raspberries and others. <IMAGE>
