PURPOSE:To produce liquid seasoning retarding or preventing precipitation of crystal of nucleic acid in seasoning having high salt concentration and flow properties, having improved shelf stability and uniformity of product, by adding an amino acid, inorganic salt, etc. to the seasoning. CONSTITUTION:Liquid or pasty seasoning having 5-25wt% salt concentration, containing sodium 5'-inosate in an amount to give <=5wt% concentration and >=its solubility is blended with >=1, preferably 1-20 times as much as one or more selected from an amino acid such as glycine, aspartic acid, etc., an amino acid salt (except sodium salt) such as its potassium salt, calcium salt, etc. and an inorganic salt (except sodium salt) such as magnesium chloride, potassium chloride, etc. as sodium 5'-inosate contained in the liquid seasoning by molar quantity. |
