发明名称 PREPARATION OF BOILED RICE FOR GRUEL
摘要 PURPOSE:To prepare the titled boiled rice having improved flavor and taste, by making nonglutinous rice absorb a given amount of water, and heat-treating the nonglutinous rice absorbing the water directly at a given high temperature. CONSTITUTION:A nonglutinous rice, e.g. whole granular rice or crushed rice such as unpolished rice, milled rice with embryo or polished rice, is washed with water or the rice bran is removed in a rice cleaning machine. Water in an amount of 1.0-2 times of the weight of the rice is added thereto. After absorbing fully the water, the rice is heat-treated at 135-182 deg.C for 1-20min by utilizing a pressure cooker or autoclave, etc. Water is added suitably to the resultant rice which is heated to give the aimed soft gruel having glutinousness in a short time.
