PURPOSE:To mask the fishy smell or other undesirable taste and odor of a natural seasoning raw material, and to obtain a seasoning compositon having strengthened desirable taste and flavor of the material and high palatability, by adding a specific amount of an inosinic acid salt to the raw material. CONSTITUTION:An inosinic acid salt such as sodium inosinate is added to a seaoning composed mainly of a seasoning raw material such as dried bonito, beef extract, pork extract, etc. The amount of the inosinic acid salt is >=4wt% based on the seasoning (when the seasoning is liquid or paste, based on the solid component of the seasoning), the weight ratio of the inosinic acid salt to the seasoning raw material is 30-400wt%, and when th seasoning contains a glutamic acid salt, the weight ratio of the inosinic acid salt to the glutamic acid salt is 30-200wt%. |
