PURPOSE:To prepare a sucrose fatty acid ester having high HLB value and useful as a surface active agent for food, easily, by mixing sucrose to a sucrose fatty acid ester in the presence of a soap, and melting the mixture under heating. CONSTITUTION:A sucrose fatty acid ester (preferably having an HLB value of 5-12; hereinafter called as SE) is mixed with preferably 40-100wt% of sucrose (e.g. granulated sugar, refined sugar, etc.) in the presence of a soap (for example, 100-150%, based on SE, of Na, K or Li salt of a 6-22C higher fatty acid), and the mixture is melted by heating preferably at 120-150 deg.C under a pressure of 20-100mm.Hg to obtain an SE having higher HLB value than the original SE. More preferably, SE is mixed with an alkali compound and a fatty acid (alkyl ester) in addition to sucrose. |
