Extruded food product based on cereals, fibre-containing roughage, spices and, optionally, processing aids and/or additives having a low water content. The product is obtained by mixing cereal grits or whole grains, spices, roughage and, optionally, oil seeds to a base mix, introducing the mix into a temperature-controllable, pressure-resistant extruder and transporting it therein under the action of heat and pressure, extruding the thus obtained plasticised material through the die of the extruder with expansion by the liberated inherent water to give a porous product strip and subsequently cutting the strip to give the desired piece size. The product so obtained is solid, homogeneously porous, crispy and brown, without a baking process having taken place. |
