PURPOSE:To obtain high-quality sweetener free from bitterness, astrigency, and unpleasant aftertaste, by treating stevia sweetener with cyclodextrin glycosyltransferase using starch or its partial hydrolyzate. CONSTITUTION:An aqueous solution containing stevioside and starch or its partial hydrolyzate is treated with cyclodextrin glycosyltransferase produced by Bacillus macerans IFO3490 to give sweetener containing alpha-1,4-glucopyranosyl stevioside but not alpha-1,4-glucopyranosyl rebaudioside. The reaction is preferably carried out at 30-65 deg.C at 4.5-7.0pH for 2-100hr. The solid concentration of stevioside and the starch or its partial hydrolyzate is preferably 1-80wt% with respect to solubility. |
