摘要 <p>PURPOSE:To prepare raw rice for the preparation of SAKE containing large amount of starch suitable for the brewing of SAKE, by crushing rice in the presence of water, and centrifuging the resultant slurry to separate and remove the part rich in fats and proteins. CONSTITUTION:Raw rice (usually polished rice obtained by removing the embryo only) is immersed in water, fully soaked, and crushed in water to obtain a milky slurry. The slurry is classified with a sieve of about 70 mesh, and the passed slurry is centrifuged with a centrifugal separator. The residue obtained by the centrifuge is separated into two layers. The components rich in fats and proteins are collected in the upper layer, and the component of the refined rice rich in startch is accumulated in the lower layer. The layers are taken out separately, and dried if necessary. When the refined rice is used as a raw material for the brewing of refined SAKE, a raw material for the preparation of rice malt, or a raw material of a saccharified liquid, it can be used without drying.</p>
