The present invention provides a method for preparing an aqueous ethanol solution having a selected flavour which method comprises fermenting an aqueous solution containing one or more fermentable carbohydrates of which more than 90.75% by weight is provided by a substantially pure fermentable sugar to yield an aqueous solution containing ethanol; and before, during or after fermentation incorporating a pre-determined flavouring agent into the solution to produce a beverage for human consumption having the desired flavour. The invention also provides a fermentation aid for use in fermenting carbohydrates and unitary packs for such use. |
