Purified chocolate is liquidised and homogenised in a liquidising and homogenising apparatus, through which the chocolate moves continuously during liquidising and homogenising. The treatment is pref. carried out by compressing the purified chocolate to form a heavy mass of chocolate, from which material is forced from the inside to the outside, pref. by shearing. The chocolate mass is pref. subjected to vibration to convert a slightly liquid mass into a pumpable liquid mass. The liquid chocolate mass may be mixed with additives before further homogenisation. A part of the pumpable chocolate mass may be recirculated. The pumped chocolate is pref. supplied continuously to the liquidising and homogenising apparatus. The walls of the apparatus may be heated and/or cooled during the treatment. During shearing and comminuting of the chocolate mass, the mass pref. flows in a trough along a rotatable axle which is provided with blades for carrying out the shearing operation. |
