A deep-frozen croquette, in particular potato croquette, which can be prepared to the ready-to-eat state by heating in an oven and which is composed of a shaped and then deep-frozen croquette dough, which is surrounded by a closed continuous coating of solidified fat. Said croquette is preferably produced by coating a deep-frozen croquette with molten fat, which solidifies on the cold croquette, optionally with additional external cooling. The device for carrying out this process is provided with, as the most essential element, a mesh-type conveyor belt, a pouring device for molten fat and a fat collection vessel and also, optionally, a device for external cooling of the coated croquette. |
