PURPOSE:To provide noodles containing seaweeds, having delicious taste and high nutrient value, and free from synthetic additives, by mixing a specific amount of powdery seaweeds to the raw material of noodles. CONSTITUTION:The objective seaweeds-containing noodles can be prepared by adding 1.5-3.0pts.wt. of powdered seaweeds such as tangle, ARAME (Eckloris bicyclis), HIJIKI (cystophyllum fusi-form), etc. to 100pts.wt. of the raw material of noodles such as wheat noodle, thin noodle, Chinese fried noodle, etc., kneading the mixture, and forming to noodles. The seaweeds are preferably reconstituted to the fresh state of the just collected one by washing with sea water, and dried e.g. with sunlight in a short time as far as possible. The dried product is crushed with a crusher to obtain powdery seaweeds. The noodle of the present invention has low water absorption and is resistant to the loss of the elasticity compared with conventional noodles. |
