PURPOSE:To prepare an alcohol-containing seasoning having excellent taste and flavor, in high utilization of the raw material, by crushing rice grains under wet condition, gelatinizing with alpha-amylase, using the gelatinized liquid as the steamed rice, mixing the liquid with malted rice, water and alcohol, and fermenting and aging the mixture. CONSTITUTION:Highly polished rice grains are crushed in the presence of water, and the resultant milky slurry is added with an alpha-amylase preparation. As an alternative method, unpolished rice grains are crushed in the presence of water, the resultant milky slurry is centrifuged, and the obtained refined rice fraction rich in starch is added with an alpha-amylase preparation. The mixture is gelatinized by heating at the optimum temperature of alpha-amylase, and the gelatinized liquid is used as the steamed rice, mixed with malted rice, water and alcohol, fermented and aged at about 30 deg.C for about 10 days, and filtered to obtain an alcohol-containing seasoning having the taste and flavor similar to MIRIN (a sweet sake used as seasoning). |
