The cutter knives are used in cutters of a useful capacity of from 50 to 750 litres in the butchery trade and meat industry. This results in large differences in the size of the knives, which are, however, always shaped in the same proportions. By means of the invention, the handling of the cutter knives is not made more difficult, but the operational safety is increased. Many trials have confirmed the commercial applicability, since sausagemeat production costs are reduced by up to 40%, and this with substantially improved sausagemeat quality. The specific knowledge and feeling of a skilled worker is no longer decisive for the sausagemeat quality. Finally, knife breakages are avoided, which frequently cause severe to fatal injuries.
