The invention relates to a process for the simple distillation of crude fatty acids which are at least partially unsaturated. It is based on the object of minimising and keeping below a preset value the formation of unwanted by-products, irrespective of the double-bond numbers. This object is achieved by distilling in the main stage crude fatty acids with a double-bond number of less than 80 at temperatures up to a maximum of 230 DEG C and associated pressures up to a maximum of 9.3 mbar, with double-bond numbers of 80-160 at temperatures up to a maximum of 220 DEG C and associated pressures up to a maximum of 6 mbar, with double-bond numbers of more than 160 at temperatures of a maximum of 210 DEG C under pressures up to a maximum of 3.8 mbar.
