PURPOSE:To obtain Tofu (bean curd) of peanut having good taste and feeling and nigh nutritive value inexpensively and simply, by grinding down peanuts soaked in water, filtering it, blending the filtered material with arrowroot starch and water with stirring and heating the blend, cooling it. CONSTITUTION:Peanuts, arrowroot starch, and water are used in a weight ratio of about 1:1:(6-7), the peanuts are directly soaked in water about 24hr, ground down, and filtered with cloth, etc. The filtered ground peanuts are blended with arrowroot starch and water with stirring, the blend is heated for a given time while being put in a heating container with stirring, and cooled naturally. The blending ratio of peanuts, arrow starch, and water by weight of 1:1:6.75 provides the best result, however, a sufficient product is obtained even by error about 5%. |
