摘要 PURPOSE:A protease is made to act on a mixture of ground figh meat and vegetable protein and they are homogenized, as they are being modified, to produce the titled food material with good food texture and properties. CONSTITUTION:Ground meat of fish such as cod or flatfish and a vegetable protein such as soybean protein are mixed and treated with a protease such as chymotripsin or chymopapain and/or a microorganism hydrolyzing protein such as a fungus in Aspergillus. Thus, both proteins are homogenized, as they are modified to produce the objective pasty protein food or protein material with smooth food texture. The resultant product is suitable for use in making soybean curd-like food or protein beverage, because of its high protein content.
