PURPOSE:Coffee solution is filtered with a specific ultrafiltration membrane and carbonated to make the titled carbonated beverage giving high refresh feel without foaming and secondary precipitation. CONSTITUTION:An aqueous coffee solution containing 5-30wt% of solid components is heated at 20-70 deg.C and filtered with an ultrafiltration membrane with a fractionation molecular weight of 4,000-50,000 under a pressure of less than 10kg/cm<2> to remove pectins, proteins and high molecular tannin. The resultant coffee solution is combined with sweetenings, acidulants, colorants, flavors, then with carbonated water or allowed to absorb carbon dioxide for carbonization. Thus, the resultant drink is free from putrefaction and the taste matches carbonated water, thus giving coffee-containing carbonated beverage with increased freshness. |
