PURPOSE:To obtain an essence of snapping turtle having improved stability, by freezing an grinding cleaned fresh snapping turtles, sterilizing them, hydrolyzing it with an enzyme into amino acids to give a liquid, deodorizing it and purifying it through filtration, to give an essence of snapping turtle having improved stability. CONSTITUTION:Fresh snapping turtles are cleansed, directly immersed in liquid nitrogen at <=-50 deg.C, frozen instantly, and ground by a grinder. The ground material is sterilized, blended with water, trypsin, etc., and protein constituting components of snapping turtle is hydrolyzed into amino acids. The hydrolyzed material is treated with active carbon, china clay, etc., deodorized, further filtered and purified. It is made into an essence directly or further concentrated under reduced pressure and made into the liquid essence. This essence has no fishy smell of snapping turtle of its own, and is extremely stable in quality. |
