PURPOSE:To convert the unpolished rice unagreeable to take to a delicious rice cake, and to facilitate the intake of the nutrients of unpolished rice, by treating a mixture of unpolished glutinous rice and unpolished nonglutinous rice by specific method to obtain a formed rice cake, indenting both side faces of the cake, perforating and steaming the cake, spraying a seasoning additive to the cake, and drying with hot air. CONSTITUTION:For example, unpolished rice mixture composed of 1pt. of glutinous rice and 4pts. of nonglutinous rice is washed with water, soaked in water for about 24hr, drained, put into a rotary net basket, and heated for about 15-20min over a furnace under rotation and agitation to prevent the scorching of the rice. The bran layer covering the embryo is broken by this treatment by the vapor pressure. The treated rice is transferred from the basket to a container, immersed again in water for about 7hr, and the swollen rice is draind and mixed with e.g. 5pts. of a 1:1 mixture of unpolished glutinous rice flour and nonglutinous rice flour, and kneaded and formed to the form of a rice cake. The obtained flat rice cake is passed between rolls having embossing patterns to emboss the top and bottom faces with uneven patterns. The cake is then pressed with a frame furnished with a perforation rod to otain a round or square cake having a perforation 3. The cake is steamed in a steaming basket, sprayed with a seasoning liquid composed of soy sauce admixed with a seasoning, and baked in a hot-air drying furnace to obtain the final product. |
