PURPOSE:A protease is made to act on a mixture of ground fish meat and animal or vegetable oil to homogenize them, as the protein is modified, thus producing the titled food material with good food texture and properties. CONSTITUTION:Ground meat of fish such as cod or flatfish and animal or vegetable oil such as tallow or soybean oil are mixed and treated with a protease such as chymotripsin or chymopapain and/or a microorganism hydrolyzing protein such as a fungus is Aspergillus or a bacterium in Streptococcus. Thus, as the protein is modified, it is homogenized together with the animal or vegetable oil to produce the objective pasty protein food or protein material with smooth food texture. The resultant product is suitable for making protein beverage or soup, because of its high protein content. |
