The invention relates to a cylindrical, static vinification vat 10 with a horizontal longitudinal axis and preferably with an elliptical cross-section. According to a principal arrangement, the vat 10 comprises, on the inside, a racking (tunning) device 20 formed of at least one mobile wall 21 acting as a piston so as to be able to exert a thrust or agitation action on the marc contained in the vat, the said thruster wall 21 being actuated by a mechanism 25, 26, 27 with movements of adjustable amplitude.
